Apple Fennel Lemon Sparkler

An alcohol-free apple sparkler with lemon juice and a lightly aromatic fennel syrup.

Ingredients

• 160 ml apple juice
• 30 ml lemon juice
• 30 g caster sugar
• 40 ml water
• 1/2 tsp fennel seeds
• 160 ml sparkling water
• 300 g ice

Method

1. Warm the sugar, water and fennel seeds in a saucepan until the sugar dissolves. Remove from the heat and cool for 20 minutes.
2. Strain the syrup and divide it between two glasses with the apple juice and lemon juice.
3. Add the ice, top with sparkling water and stir gently.

Lightly crush the fennel seeds before adding them to the syrup.
