Date Orange Sticky Puddings

Individual date puddings with orange zest and a warm brown-sugar cream sauce.
Ingredients
- 150 g pitted dates, chopped
- 180 ml boiling water
- 1/2 tsp bicarbonate of soda
- 90 g softened butter
- 160 g light brown sugar
- 2 medium eggs
- 150 g self-raising flour
- 1 tbsp finely grated orange zest
- 150 ml double cream
Method
- Pour the boiling water over the dates, stir in the bicarbonate of soda and leave for 10 minutes. Mash roughly.
- Heat the oven to 180°C, 160°C fan. Grease six 200 ml pudding moulds with 10 g of the butter.
- Beat 50 g of the butter with 80 g of the sugar. Beat in the eggs, then fold in the flour, orange zest and date mixture.
- Divide between the moulds and bake for 20–25 minutes until risen and a skewer comes out without wet batter.
- Simmer the remaining butter and sugar with the cream for 3 minutes, stirring. Turn out the puddings and spoon over the sauce.
Leave a little space at the top of each mould for the sponge to rise.
